Food Recap Part 3!




So now that Bachelor Pad is over and Erica went home (thank GOD!), I can now start this update!  I went for a run today since I need to get my butt back in gear after all of this food I've been making/eating!  I plan on attempting a few healthier recipes in the near future, but I'll probably push that off as long as I can and instead continue on making lots of desserts. :) 

Here are some more of my previous attempts.  I think after this food recap, I'm caught up (on the food part at least!).  Enjoy!

"Ham and Cheese Pretzel Bites"

My attempt:

A few months ago, Collin (friend from work) and his girlfriend, Sarah, had some us over for drinks and apps and we had a great time.  I decided I was going to try these ham and cheese pretzel bites to take since they sound awesome, right?  Considering that my first job ever was at Auntie Anne's, I automatically assumed that this was the perfect recipe for me and that it'd be a cinch.  Ha.  Not only did it take me forever to make the dough, I had to let it rise for 2 hours, and then was forced to add a ton of extra flour to even get it to roll out.  After baking the bites, I brushed a little butter on top (that's how Auntie Anne's makes their pretzels taste good!) and they tasted great.  My problem was that I finished them and then had to drive 30 minutes to West Des Moines.  By the time I got there, the bites weren't even hot and the butter had just made them soggy.  SAD DAY!

In moving forward, I'd make these again, but I'd only do them if I was having people over to my house because it was awful to spend so much time on something that was just "eh" after about 30 minutes.  If I know they will get eaten immediately, I'll make them again.

Even though Sean had these the next morning (he worked the night of the get-together), he liked them...so Sean approved!

"Asian Spinach Salad With Orange and Avocado"

My attempt:

I decided to make this with orange glazed chicken and orange cilantro rice one night.  If you can't tell, I was going for the orange theme.  The chicken?...eh.  The rice?...gross.  The salad?...just okay at best.  I love new salad ideas, especially ones with fruit.  This salad had great ingredients (spinach, oranges, avocados), but the dressing was terrible.  Unfortunately, I don't have a great alternative for the dressing, but something sweeter with less of an Asian taste would make it better, in my opinion.

"Fluffy Cherry Frosting and Maraschino Cherry Cake"

My attempt:

Sean's birthday was about a month ago and since I've started making cakes, he was begging me to make him an almond cake with maraschino cherry frosting.  I started Googling a lot of different ideas and found a great recipe for almond flavored cake and then a thick maraschino cherry filling.  I wasn't sure what I wanted to do for the frosting and when I came across this little baby, I HAD to try it.  The frosting was so light and it reminded us of marshmallow fluff because of the consistency.  The only downfall of this frosting was that it wasn't very thick and solid so some of it oozed off of the sizes over the next few days.  Regardless of that, the cake and frosting were GREAT and Sean has already make his request for it again!

Considering I have been avoiding the dishes in the sink ever since I finished making dinner tonight (ribeyes, garlic green beans, and cucumber tomato salad...YUM!), I should probably go take care of it.  Goodnight!
