Pesto and Some Pumpkins

I started running again this week!  Well, I haven’t ran that much, but a 3.3 and 2.0 mile run counts in my book!  I haven’t consistently run since I ran Dam to Dam back on June 2nd and I know I’m out of shape considering how sore I’ve been from my short runs over the past few days!  Kind of sad (and pathetic!).  Now that the weather is starting to cool down, I’m going to try and get back in the swing of things.  With the way that these thighs are growing, I NEED to start working out again J. 
I’m going to my friend Jacque’s this weekend to have some girl time, hopefully complete a few Pinterest projects, and learn some more about harvesting corn by riding in the combine with her husband and in-laws!  I know NOTHING about farming, so I’m really excited!  I’m sure I’ll have some pictures to post about it next week.  Anyway, enjoy the update pesto and my “fence post pumpkins”!

“The Best Pesto”

My attempt:
Last year, I grew a bunch of basil and I had every intention of making pesto with it at the end of the year, but got lazy and never did anything with it.  This year, especially since I have this blog to update, I MADE myself make pesto.  What amazed me after making it was that 6 full cups of fresh basil turned into about a cup and a half of pesto…such a bunch of crap, especially considering I added a ton of other ingredients to it!  The biggest problem I had while making this was that I don’t have a large food processor.  I have a small Oscar, which is usually great for chopping most of the things I do, but the bowl of it doesn’t hold much.  I had to gradually chop everything, which was taking forever, so I just put all of the ingredients in my Magic Bullet blender instead.  It was definitely better than using the Oscar, but was still kind of a pain.  Even though it wasn’t a very easy process to make the pesto, it still ended up tasting good and I’m going to try and make some kind of recipe with pesto soon!

My basil plant:

After cutting almost all of my basil, I ended up with about 6 cups of basil, loosely packed:

I juiced 1 lemon:

And added some Pecorino Romano cheese:

Toasted 1 cup of almonds:

Chopped everything in my Oscar to start:

 And voila…pesto! 

Sean hasn’t tried it yet, so I can’t tell you whether or not he approves, but I’ll make sure to make him try it on a day when he’s REALLY hungry so that way he’ll say it’s good regardless. J

“Fall Pumpkins”

My attempt:
I’m officially ready for fall.  I had been depressed about summer ending up until a week ago.  Not only does fall mean that football season is here, but it means it’s time for mums, pumpkins, gourds, and fall desserts (aka pumpkin anything, apple pie/crisp, spiked apple cider, and caramel apples).  I wanted to do some kind of craft project that was fall-related and when I came across these wooden pumpkins, I HAD to try it.  First of all, in order to do this project, I needed a big piece of wood from Menards, which totally intimidates me to buy, so I convinced Sean to come with me.  I said I needed to get a few “things” from Menards, and he said he wanted to come.  Menards=manly store.  After showing Sean what I was up to, he helped me decide that I needed a 4x4x6 fence post.  I bought that, some burnt orange paint, some brown paint ($2.49 paint samples), and a small wooden dowel.  When I got home, Sean was awesome and volunteered to cut the fence post for me into the pieces that I needed.  If I was smart, I would have known my sizes prior to going to Menards and the guy could have cut them with the electric saw.  Well, I wasn’t smart, so Sean did it J.    Once the wood was cut, I painted the pieces orange and then put a brown paint/water mix over it.  I also painted the wooden dowel pieces brown.  I had to buy some crafty things at Hobby Lobby to decorate the pumpkins, but I think they turned out pretty cute!  I ended up with 2 sets of 3 pumpkins and 1 small pumpkin from the 6’ fence post.  I plan on taking one of the sets to Jacque this weekend…hopefully she likes it!

I hot glued on the brown stems:

I bought some cute fabric and cut it into strips to make the bows.  You could use ribbon, but I wanted the fabric to fray at the ends:

I bought some straw-like ribbon and also made a bow with it:

I hot glued the straw bow to the fabric bow:

I coiled some wire around a pen:

Hot glued the bows to the stem base:

And we have pumpkins!

Breakfast and a Birthday Dinner!

I know it's been about 2 weeks since my last post, but the past 2 weeks have been crazy so I promise to keep this thing update more often from here on out!  Just to give you a quick update on life, I have recently accepted a new job with Pioneer as a Supply Chain Analyst for Soybeans and Wheat!  I'm so excited and can't wait.  I start in about 2 weeks so I'll be really busy up until then trying to wrap everything up with my current position.  Also, Sean and I went back to Decorah last weekend to visit his family and it was great!  Not only did we get to see his family that we haven't seen in months, but the Iowa State beat Iowa!!!  Yesterday, I went to Ames for the football game and ISU is still undefeated!  We'll see if they can keep the streak going!  Enjoy the update!

"Cream Cheese Monkey Bread"

My Attempt:

A few weeks ago, I attempted this monkey bread recipe.  Carolyn, another specialist that I work with, saw this recipe on Pinterest and passed it on to me so I have to give her credit for even trying this one!  Jesse stayed over one night over Labor Day weekend, so I made this for breakfast for Jesse and Sean.  It was really good!!!  I would definitely make this again.  The only thing I did differently from what the recipe said was that I used Neufchatel cheese instead of cream cheese.  It tastes exactly the same, but is low fat.  You would never know the difference unless someone told you.  Maybe before I take my new position, I'll make this recipe for the group at work! :)

Use Grands biscuits...so easy!


Neufchatel Cheese:


Pull the Grands biscuits in half:


Cut the cream cheese in cubes:


Put a cube in the center of each biscuit and curl up the sides:


Line the first row, open side up, in a bundt pan, and top with the cinnamon sugar mixture.  Then drizzle with melted butter:


Put the next layer, open side down, on top of the cinnamon sugar:


Top with more cinnamon sugar, bake, and take out of the oven when it is golden brown:


Sean approved!

"Chicken Fajitas"

My Attempt:

Jesse's birthday was last Tuesday, but since I was out of town for work and missed his birthday on Tuesday, I decided to make dinner and cake for him on Wednesday.  I'm not the best at making Mexican food and since that's what he asked for for his birthday dinner, he got fajitas.  I know it's nothing extravagant, but I think they turned out pretty good!

Mix together seasonings, put in a plastic baggie with the chicken, shake, and let sit for a few hours (I only waited about 20 minutes):


Then sautee the onions and peppers:


Combine the chicken with the veggies:


Serve on tortillas with some sour cream and voila!


Sean approved!

"Peanut Butter Cake"

My Attempt:

This cake turned out really well, but the frosting definitely didn't turn out like the recipe said it would.  It says to "pour the warm frosting over the cooled cake" and I was drooling because creamy, melty frosting sounded so good.  When I made the frosting, it was thick and I could barely spread it.  I would recommend using less than 1 pound of powdered sugar.  I made this as Jesse's birthday cake and he liked it so I guess I can call it a success!


The recipe said to bake the cake in a jelly roll pan, but I made it in a cake pan instead:


Boil together the ingredients for the frosting:


Instead of being able to "pour" the frosting, it looked like this after adding the powdered sugar:


I had to spread the frosting over the cake, which was kind of a pain since the frosting was so thick:

Football, Hiking, and Some Coasters!

It's Monday night and I'm officially sad that this long holiday weekend is almost over.  Even though the weekend did go fast, it was AWESOME.  On Friday night, I met Jesse, Brent, and Martin out for some drinks at Wellman's on Ingersoll and then had some Mexican at La Hacienda down the road.  It was a great start to a long weekend.  On Saturday morning, my alarm went off at 7am so I could get up and get ready for some ISU tailgating!  We got to the tailgating lots around 9am and had a great morning/afternoon of drinking (so much so that I didn't even mind the sunburn that I got!).  ISU played Tulsa and won!  On Sunday, I had a very lazy start and relaxed by the pool for a few hours, which was great.  When Sean got home from work, we went hiking at Ledges State Park with our friends Jesse and Stephanie.  We brought Hootie with us and he had a great day too.  Finally, today, I have done absolutely NOTHING and have loved every second of it.  Do I have to go to work tomorrow?  Here are some pics from the weekend:

"Make Your Own Coasters"

This DIY project is AWESOME.  All of my friends can expect to be getting these babies for Christmas this year!  I conned Sean into coming to Menard's with me last week to get some supplies for this project (and a few upcoming ones too!).  Since Menard's is "manly" he was all for it.  If I asked him to come to Hobby Lobby or something, he would have not come.  I bought 8 4x4 tiles and they were only 13 cents each!  I also had to buy some scrapbook paper and felt so I stopped at Michael's on the way home (0.99 cents per sheet of scrapbook paper and 0.29 cents each for the felt).  I only needed 2 sheets of scrapbook paper and felt to do 8 tiles.  The project also called for mod podge and clear spray paint.  Since the mod podge was $8.99, I decided to make my own for WAY less.  Mix 50/50 glue and water and voila!  The coasters turned out great and I'm going to keep my eyes peeled for ISU scrapbook paper so I can make themed coasters too! 

Cut 4x4 squares from your scrapbook paper:



Paint mod podge on the tile, then put down the paper, then paint on more mod podge:





Let them dry overnight:


Spray paint them with 2 coats of clear spray paint and then hot glue the felt pads to the bottom:
